Inaddition to missing out to plot points because you don't know which side quests to complete or not, it also leads to jarring tonal shifts between missions. Do main missions or side missions in differing orders and you have two conversations shift between "Bayek being sweet to kids" immediately to "Bayek screaming that he's going to murder

But meeting Harkhuf unlocked a whole plethora of interesting side-quests that culminated in Bayek going after Sefetu and clearing the first large fort in the game, Fort Nikiou. Ifyou accept those timed quests, that starts a running clock at that point. If you don't finish those in time, it's a failed quest. But believe me, it's no big deal. There will be other similar timed quests all over Greece (not unique). You aren't missing out on something huge or quest-dependent; you're just missing out on XP and drachmae.
